Dark Chocolate Chunk Cookies

One word? YUM.
Ultra-gooey and heavenly, this cookie recipe was developed by our good friend Sarah of @sezzy.brown.

Dark Chocolate Chunk Cookies
Ingredients
- 1 cup brown sugar
- 1/2 cup caster sugar
- 125g butter, melted
- 1 tablespoon vanilla extract
- 1 egg
- 1/2 teaspoon sea salt flakes
- 1/2 teaspoon baking powder
- 2 cups plain flour
- 250g 70% dark chocolate, roughly chopped
Preheat your oven to 170°C.
Add cooled butter to a mixer with sugars and vanilla extract. Combine well on medium speed for 1 minute.
Add the egg, and combine for 30 seconds on medium.
Sift in flour and baking powder, then sprinkle in sea salt, and mix until just combined.
Add your chocolate chunks, saving a handful for topping, and fold into your mixture.
Prepare 2 baking trays with baking paper, roll out the dough into 12 even balls, and top with 1-2 more chocolate chunks.
Bake for 12-15 minutes, or until your cookies are golden around the edges.
Top each cookie with extra sea salt flakes, and allow to cool before you completely and utterly devour them in one whole sitting – like we do!
Tip: if not devoured in one sitting, pop them into a microwave oven for 10 seconds to relive that beautifully gooey decadence.
