Summer's Calling – So Is This Lemon Curd Mousse
An easy-to-impress, uncomplicated treat for your summer dining ahead, this delectable, citrus-adorned mousse will have your guests licking their dessert spoons – front and back.
Lemon Curd Mousse | Serves 4-6
Ingredients | Crust
- 3/4 cup crushed graham crackers
- 2 tbsp / 26g granulated sugar
- 3 tbsp / 42g salted butter, melted
Ingredients | Mousse
- 240g lemon curd
- 480ml chilled, heavy whipping cream
- 60g icing sugar
- Lemon zest from 1 large lemon
- Yellow food colouring, optional
Place your cream-whipping mixing bowl in the fridge to chill as you prepare the crust.
In another medium-sized mixing bowl, whisk together your crushed graham crackers, and sugar. Add melted butter into the mixture, whisk until fully combined, and moist.
Divide crust mixture into your chosen dessert glasses, being sure to firmly press into each base to create an even layer. Set aside.
In a clean, medium-sized bowl, combine lemon curd, lemon zest, and sugar. If you wish to deepen your mousse colour, this is where you may add some drops of yellow food colouring. Colour to your desire – our advice is keep it natural-looking.
Whip the cream in your pre-chilled mixing bowl, then fold gently into the curd mixture.
Divide your mousse mixture into the dessert glasses, spooning evenly over the crust.
Cover each glass with cling wrap, and refrigerate for at least 4 hours, or overnight.
To serve, top each glass with fresh or frozen berries, mint leaves, and anything else that creates a stylish contrast to your lemon-hued dessert!
