Mouthwatering Burrata, Prosciutto & Basil Salad

Bursting with summertime flavour, this impressive yet effortless salad is the showstopper your festive table deserves.

Burrata, Prosciutto & Basil Salad | Serves 4

Ingredients

  • 1 punnet sweet berry truss tomatoes, halved
  • 1 punnet cherry tomato medley, halved
  • 4 heirloom tomatoes: green, orange, red, yellow, quartered
  • 8-10 slices prosciutto, thinly sliced
  • 2-3 burrata balls
  • 2 medium cucumbers, ribboned
  • Large handful basil
  • Your best extra virgin olive oil
  • Sea salt + cracked black pepper
  • Red wine vinegar
  • Add halved tomatoes to a smallish bowl, toss with olive oil, salt and pepper, and allow to sit for 5 minutes.

    Place tomatoes on your preferred platter, distributing evenly.

    Tear burrata into bite-sized pieces, place over tomatoes.

    Roll or twist prosciutto slices, place.

    Roll cucumber ribbons, place.

    Place basil leaves over salad, whole.

    Season again, very lightly.

    To serve, add a light drizzle of olive oil and red vinegar.
